
Tuscan Artisan Penne 500g
In the old town of Lari, inside the Castle, stands a large yellow building: since 1926 it is the home of a small pasta factory called Pastificio Famiglia Martelli. Artisan in spirit, traditional in substance, this is where slow gestures and vintage machinery creates semolina pasta famous around the world.
Smooth or Ridged? Pastificio Martelli solved the dilemma: in the Neapolitan tradition, Penne were born smooth. If it is cold-worked, bronze-drawn and slow-dried, smooth pasta becomes porous and does not need the ridges to hold the sauce. Indeed, the more uniform thickness compared to its ridged sister makes it particularly refined. Great with any sauce in the pantry!
