The Taggiasca olives are a variety autochthonous of the north western side of Liguria, and one of the most popular products of La Macina Ligure. The Ligurian climate, water and calcareous soil, are mostly responsible for its unique flavour and taste.
Small, with a unique tender texture and a rich dark reddish colour that serves as a constant reminder of the flavour they carry with them. Oil rich, delicate, fruity, sweet with a spicy hint of almonds and pine nuts, and a slightly bitter after-taste. Use them in a tomato and chilli sauce for a quick pasta, antipasto or seafood recipe.
