Calamarata Pasta w/ Friarielli, 'Nduja and Tomato Sauce
A super easy pasta that will leave your guest speechless and impressed with your Italian cooking skills.
Ingredients (for 2 people)
180g Regina dei Sibillini Calamarata Pasta
100g Friarielli
200g Tomato Passata
1tbs 'Nduja
Grated Pecorino Cheese
Salt, pepper and extra virgin olive oil
Method
Boil abundant salt water.
In a pan, heat up some garlic in extra virgin olive oil, then add the tomato sauce and let simmer for about 10 minutes. Then add the 'nduja until dissolved in the sauce, and the friarielli. Let cook until the pasta is ready, lowering the heat.
Cook the pasta until al dente and then throw into the pan with a little of the cooking water (the starch released from the pasta will make the sauce a bit creamier).
Increase the heat, let the sauce mix with the pasta. Grate pecorino cheese and serve.
