Recipe: Spaghetti with ’Nduja & Burrata (Serves 2)

Ingredients:

  • 180g spaghetti
  • 2 tbsp extra virgin olive oil
  • 2 garlic cloves, thinly sliced
  • 1.5 tbsp ’nduja
  • 1 x 400g tin of cherry tomatoes
  • Salt to taste
  • 1 fresh burrata ball
  • Fresh basil (optional)

Instructions:

  1. Cook the spaghetti in salted water until al dente. Reserve half a cup of pasta water before draining.
  2. Make the sauce: Heat olive oil in a large pan, add the garlic and cook gently for 1 minute. Stir in the ’nduja until it melts into the oil. Pour in the tinned cherry tomatoes and gently crush them with a spoon. Simmer for 8–10 minutes until slightly thickened. Add pasta water to loosen if needed.
  3. Toss the spaghetti in the sauce until coated. Let it absorb the flavours for a minute.
  4. Plate up: Divide the pasta into bowls. Tear open the burrata and place half on top of each portion.
  5. Finish with flair: Drizzle with olive oil, scatter some fresh basil or lemon zest if desired, and serve immediately.
