Alletterato tuna, with its distinctive markings resembling numbers and letters on its dorsal side, is a variety of tuna. Among its various cuts, the Ventresca, or tuna belly, holds a special place. Considered the most sought-after part of the tuna, it is obtained from the richly fatty area surrounding the abdominal cavity. The Ventresca tuna is treasured for its delicate flavor and velvety texture, making it a highly regarded ingredient among seafood connoisseurs. Its exceptional qualities allow it to be enjoyed in its purest form, allowing the natural richness of the fish to take center stage.
