Ortolana refers to a style of Italian sauce made with garden vegetables. This version contains 8.87% organic aubergine and 8.21% organic peppers, alongside tomatoes, onion, basil and white wine. The vegetables are lightly fried in extra virgin olive oil before being combined with the tomatoes and slowly cooked.

How to enjoy

Warm gently and serve with rigatoni, penne or fusilli, allowing the pasta to pick up the vegetable sauce. It also makes a useful addition to baked pasta dishes or can be spooned over grilled polenta and finished with grated cheese or fresh basil.

FAQs Answers to common questions about this product.

What does Ortolana mean in Italian cooking?

Ortolana refers to a garden vegetable style of cooking. In pasta sauces, it generally describes a tomato-based sauce with vegetables such as aubergines, peppers or courgettes. The vegetables used can vary between recipes.

What is the difference between Ortolana and a regular tomato pasta sauce?

Ortolana contains a greater variety of vegetables. This version includes aubergine, peppers and onion alongside the tomatoes, giving it more vegetable character than a simple tomato and basil sauce.

Does this Ortolana sauce contain wine?

Yes. The recipe includes 2.96% organic white wine, which is added during the cooking process alongside the vegetables. Customers avoiding alcohol entirely should take this ingredient into account, as cooking does not guarantee complete alcohol removal.
