BOMBOLIERI ORANGE MARMALADE CROSTATA. NONNA'S RECIPE.

A simple recipe, that speaks of home. And afternoon saved by the fragrant zest of oranges. 

For the crust

200g Flour
100g Butter - cubed
90g Brown Sugar
1 Egg 1 Yolk
Pinch of salt

1 Jar of Orange Marmalade

Method

To make the crust

Place flour, sugar and pinch of salt in a fountain like shape, inside the eggs. With a fork, start incorporating the eggs with the flour and sugar, then when crumbles, add cubed butter. Work the butter quickly to avoid warming up. Work the dough till it looks even. Make a ball shape, wrap in cling film and chill for 1 hour, more if it's a hot day. 

When ready, dust a flat surface, then roll the dough to a 3mm thick. Keep some on the side for the stripes at the top. Place the tarts in the freezer for 15-30 minutes, this will avoid the shrinking of the tarts during the baking process. 

Heat the oven at 170°, prick the bottom with a fork and place the marmalade in the tart shell. Roll the excess pastry to decorate the top. Bake for 40 minutes, till the pastry is nice and golden. Enjoy with a cup of tea, a scoop of mascarpone or as it is.
