Butter for the baking tray

To serve: icing sugar and whipped cream

Grease a baking tray with butter. Cut a 250g panettone into thick slices, leaving the crusts on, and arrange them in the baking tray.

In a bowl, whisk together 2 eggs, double cream, milk, vanilla extract, and 2 tbsp of honey until well combined. Pour the egg and cream mixture evenly over the panettone slices.

Preheat the oven to 160C and place the baking tray in a larger tin filled with a couple of centimetres of water to create a bain-marie.

Bake for approximately 35 minutes until the pudding is just set. It should have a yellow interior and a nicely browned top.

Remove from the oven and dust with icing sugar. Serve the panettone pudding with spoonfuls of whipped cream.
