Orecchiette with Anchovies and Turnip Greens Recipe

Ingredients (4 people)
400g Orecchiette
800g Turnip Greens
4 Anchovies
Extra Virgin Olive Oil
2 Garlic Cloves
Chilly & salt
For extra flavour, add 1 tablespoon of Taggiasca olives tapenade.
Fresh Lemon Aromatic extra virgin olive oil to finish
Method
Mince the garlic cloves. It is recommended to remove the inner germ, as it can be harder to digest when cooked for a short time.
In a skillet over low heat, pour some extra virgin olive oil and add the anchovies, minced garlic, and chili. Cook until they become slightly golden.
Add the turnip greens to the skillet and cook for 10 minutes. At this point, you can also add the tapenade for an extra burst of flavor.
Meanwhile, bring a pot of abundant water to a boil and cook the orecchiette until they are al dente.
Drain the cooked orecchiette and add them to the skillet with the other ingredients. Increase the heat to high and toss everything together.
Serve the dish and consider adding a drizzle of lemon-infused extra virgin olive oil for a refreshing touch.
